Jon just always seemed to respect George more than his father. It's not that he didn't love him, but he didn't agree with Roald's politics more often than not - Look at the whole scenario in the River Drell. Add to that his death, which Jon has to live with whether his father died by accident or, more hurtfully, on purpose. Jon doesn't feel ready to be King. He didn't want the crown yet, but he has it, anyway. When it comes down to it, George was more of a mentor for Jon when it was about becoming the man he wanted to be. Roald taught him the protocol, but George taught him how to be king.
