Your Dove is very unhappy (or is she just indulging her inner romantic?) as she has every right to be considering how much of her life isn't her own.

Not so much unhappy as just frustrated. Like you say, her life is often not her own. My headcanon is that she makes a really sensible political choice for consort, but he's not on her level intellectually and they don't really share many interests, so she's not feeling a great connection. There have got to be smarter men at court who interest her more, but she'd not go there for a bunch of reasons.
But yeah, the books are where she gets to privately indulge in fantasy. And she likes the happy for now endings because even in fantasy she's a pragmatist at heart.

And frustrated!Dove is better than unhappy!Dove, albeit only marginally. I must say, I like your headcanon far better than the rosy picture we were given in 'Nawat', and I wish we'd had a Dove book in between the two.

Haha, happy to share headcanon. I think my Dove is pretty comfortable with trading things off for a bigger goal, of which she'll have many as a queen. So my Dove was happy to marry a decent sort of guy who who would give her heirs, who could have some kind of useful role, maybe in the military. And also a match that wouldn't upset a whole lot of people who will be looking and reading things into her choices. So I don't think she's unhappy or regretful about it, and I think they'll get along just fine; it'll just be more friends and companions than ardent lovers. I think for Dove to fall for someone they'd have to really impress her intellectually. And there just won't be many, if any, suitable suitors who tick that box.
Doesn't mean she can't have crushes on clever and handsome but otherwise inappropriate men along the way!
